Why Full-System Certification Matters in Dry Aging Equipment — And What Sets The Aging Room® Apart

When it comes to food safety, operational performance, and regulatory compliance, the scope and integrity of certification can vary significantly. At The Aging Room®, we’ve made it our mission to exceed expectations by investing in full-system safety and sanitation compliance—because anything less simply doesn’t meet the standards our industry and customers’ demand.

 

Some manufacturers claim their systems are "certified," but a closer look often reveals that only individual components—such as the condenser—have been tested. This partial approach can be misleading. Unless the entire unit is evaluated and certified as an integrated system, claims of compliance with standards like UL or NSF can’t be relied upon. In some cases, uncertified components are used elsewhere in the system, putting both safety and sanitation at risk.

 

At The Aging Room®, we do things differently.

Our equipment—specifically the Premium Meat Ager (PMA) model—has undergone rigorous inspection and testing by Nemko North America in collaboration with Product Safety Consulting Inc. 

 

These evaluations included assessments against nationally recognized safety and sanitation standards:

- UL 508A – Standard for Industrial Control Panels

- UL 60335-2-89 – Commercial Refrigeration & Ice Makers

- NFPA 70 – National Electrical Code

- NSF/ANSI 7 – Commercial Refrigerators and Freezers

 

What does that mean in practice?

It means that every component, every wiring junction, and every material—down to the silicone sealant and panel enclosures—was tested under field conditions. We passed all inspections, including:

- Electrical safety (insulation, grounding, overload protection)

- Structural integrity (no exposed wires or sharp edges)

- Sanitation compliance (NSF-approved materials, sealed joints, cleanable surfaces)

- Marking and labeling durability

 

This is not just about a sticker—it’s about real peace of mind.

Our dry aging chambers are labeled with serialized Nemko evaluation and sanitation marks, providing validation to inspectors and authorities having jurisdiction (AHJs) across the U.S. and Canada.
